
3 tbl spoons olive oil
1.5 cups chopped onions
1 cup chopped green peppers
2 cups chopped celery
2 garlic cloves, minced
14.5 oz canned diced tomatoes
4 tbl spoons tomato paste
4 cups of water
4 cups canned chicken broth
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 bay leaf
8 drops hot pepper sauce
1 cup pearl barley
1 cup cooked ham
8 oz cooked chicken breast (no skin)
12 oz cooked shrimp
24 large black olives
How-to:
Heat oil in a large soup pot.
Add onion, green pepper, celery and garlic - saute until just beginning to brown.
Add tomatoes, tomato paste, water, chicken broth, salt, thyme, cayenne pepper, black pepper, bay leaf, hot pepper sauce and barley.
Bring to a boil, then reduce heat, stir and simmer covered for 1.5 hours.
Just prior to serving, stir in cooked ham, chicken breast, shrimp and olives; heat through and serve.
